Recipe: Everything-Free Applesauce Muffins

Very delicious muffins here. I'd even wager than most people wouldn't be able to tell they were gluten free, let alone everything free.Or it's been so long since I've had wheat that these seem good. Whichever. 

I think a variation with pumpkin would also be fantastic. Will definitely try something like that in the not too distant future.

You could probably make this into a cake. I usually prefer muffins because you can just grab one and go, especially while holding a baby. Also, no dishes required. Cake demands a dish and fork, and who has time to wash those anymore?
I lied; I used a plate. No fork though.


They're missing something though - perhaps a glaze or topping to make them really shine. If you can do nuts, I think they'd be great on top. Maybe maple syrup or crystallized ginger. Next time.

Recipe: Everything-Free Applesauce Muffins

1 cup sorghum flour
1 cup tapioca or potato starch
1/2 cup millet flour
1 teaspoon xanthan gum
1 1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground ginger
1 teaspoon salt
3/4 teaspoon baking powder
1 1/2 teaspoon baking soda
1/4 cup olive oil
1 cup dark brown sugar
2 eggs OR egg replacer
1 1/2 cups unsweetened applesauce
1/2 cup milk of your choice
1 tablespoon vanilla 

Set the oven to 375.

Whisk up the flours through baking soda. 

In a large bowl, mix the oil, sugar and eggs well. Then add in remaining ingredients and mix very well, possibly with a whisk. Then add in the flour mixture and mix that well. 

Pour batter into greased muffin tin and bake about 20-25 mins, testing with a toothpick.

 I made about 20 or so muffins. Or, one cake. Enjoy!
